I remember the coconut candies I used to eat in primary school. It was a treat back then. At a friend’s daughter’s wedding here in Kano I saw and tasted raw coconut candy. It was made with lots of sugar.In the spirit of nostalgia I wanted to make something easier,healthier and without the sugar. It is a no cook coconut candy. This is so easy to make and will save you a lot of money.
- 1 cup almonds
- ¼ cup cocoa powder
- ½ cup shredded coconut (divided)
- 1 cup pitted dates (soaked for 1hr and drained)
- 1½ tbsp coconut oil
- 1 tbsp honey
Preparation
1. Combine
the almonds, cocoa powder, and ¼ cup of the shredded coconut together in a food
processor. Process into a fine powder.
2. Add in
the soaked dates, coconut oil, and honey. Pulse until a dough-like consistency
forms.
3. Roll
batter into small-bite-size balls. Then roll balls through a bowl with the
remaining shredded coconut to coat. Store in an airtight container or freezer
to preserve freshness!
