Dr Dileem's Almond Banana Bread


So Nigerian bread baking industry is on strike following the increase in the cost of baking flour.  It is quite easy to bake your own bread which would be healthier for you and your family. Try baking a batch of this light, healthy non-baking flour banana bread. It’s perfect for breakfast. It’s gluten-free, low in sugar, and contains zero dairy (it does contain eggs)
Ingredients:
·         3 eggs
·         3 ripe bananas
·         1/4 cup coconut oil
·         1 tbsp vanilla
·         2 cups almond meal (smoothly blended almonds)
·         pinch of salt
·         1 tsp baking soda
 Instructions:
1.      Pre-heat oven to 350 degrees F
2.      Place the eggs, bananas, coconut oil, and vanilla in a food processor and blend until smooth. Add the dry ingredients, and pulse until well combined.
3.      Pour batter into greased bread loaf pan, and bake for 35 – 45 minutes or until a thin knife comes out clean.
4.      Keep in sealed container for up to 3 days, or freeze for up to 1 month.
